    • Hey from Oregon Paula! I was never so lucky to enjoy stuffed bell peppers growing up but I adore bell peppers so I will be trying this tomorrow night! A local store here had a fantastic sale on gorgeous red bell peppers for 45 cents per pepper and they are huge! I bought all the fixings to stuff them with and I have some Thai Jasmine rice so I might just prep everything tonight and put it all together tomorrow. Your recipe looked great!

  • I been I-Q-EFFin my peppers with chicken and cheese for the past few months on my keto diet. I cook them before freezing and I take halves out when I want a stuffed chicken or stuffed beef pepper. amazing.. and yea sometimes peppers are on certain nights.. not all the time.

  • Looks good. I cut my bell peppers in half lengthwise and take out ribs and seeds. Then blanch for a few minutes in boiling water. Cooked rice mixed with raw ground meat,diced onion,seasoning and a little tomato sauce. Pour more sauce on top and bake till peppers are tender. Top with cheese if you want

  • I like this recipe using the red peppers, it makes a beautiful dish. I had always par boiled my green peppers but I think maybe when I fix these I will do as you have here and put the cup of broth in the pan with the peppers raw. Also thanks for the idea of using steamed cabbage leaves for a vessel under the pepper. Great recipe Paula. Thanks for sharing and y'all have a Blessed day.
